potato dosa Ingredients:
4 Big Potatoes, Grated
1 Cup Maida
4 Green Chilies
2tbsp Coriander Leaves, Chopped
Oil for roasting
Salt to taste

Method:
Potato Dosa Peel and grate Potatoes. Add Salt and leave aside. Add Maida to the Potatoes and make a soft batter with little water. The consistency must be like that of Pakora batter. Add chopped Green Chilies and Coriander leaves and mix well.

Heat a Tava and grease it with Oil. Pour a spoonful of the Potato batter and spread it like a dosa. Sprinkle a tsp of Oil and roast it on both sides till they turn brown.

Serve hot with chutney and tomato sauce.




Spicy Jackfruit Dosa

Ingredients:
5 Segments of Jackfruit, not too ripe
1 Cup Rice
¼ Cup Coconut
Salt to taste
4 Green Chilies

Method:
Spicy Jackfruit Dosa
Soak Rice for 4 hours. Grind Rice along with Jackfruit, Rice, Coconut, Salt and Green Chilies to a batter.

Grease a griddle and pour a spoonful of batter and made thick Dosa.

Add a tsp of Ghee and roast.


Palak dosa
Ingredients:
5 Bunches Palak(Spinach)
1 medium Onion Chopped
2 tsp Green Chilies paste
Dosa Batter

Method:
Palak dosa Boil Palak and grind it to a paste.

Heat oil, add Onions and sautϿe.

Add Chili Paste and stir. Add Palak and fry till the water evaporates.

Keep it aside. Heat a griddle and spread a spoon of batter and smear the palak mixture over it.

Add a tsp of oil and roast until done.

Serve hot with Coconut Chutney.


Spicy Dosa


Ingredients:
2 Cups Rice, Soaked for 4 hours
1 Cup Chiroti Rawa/Semolina
1 Cup Coconut
Lemon sized Tamarind
1tbsp Jaggery
Salt to taste

For the Masala :
5-6 Red Chilies
1 tsp Coriander Seeds
Few Curry Leaves
1tsp Fenugreek Seeds
1 tsp Cumin Seeds
1 tsp Bengal Gram
1 piece of Hing/Asafoetida
1 tsp Oil

Method:
Spicy Dosa Fry the ingredients for the Masala in 1 tsp of Oil. Grind the Masala with Rice, Coconut, Tamarind and Jaggery to a batter.

Add Salt, Rawa and the required quantity of water and mix well.

Leave aside for half an hour.

Grease a griddle and prepare Dosa's and serve with Ghee and Chutney or Ghee and Jaggery.

Adai Dosa

INGREDIENTS :

1 Cup Raw Rice
½ Cup Bengal Gram split
½ Cup Black Gram split
½ Cup Green Gram split
8 - 10 Red Chilies
4 - 6 Green Chilies
4 large Onions, Chopped finely
1 tbsp Coriander leaves or Dill or Mint leaves, Chopped
A pinch of Asafoetida
Salt to taste
Half fresh Coconut, Grated
Oil for roasting

METHOD :

Adai DosaSoak the lentils and Rice for 5 hours. Grind the lentils, Rice, Green Chilies, Red Chilies, Salt and Asafoetida to a smooth batter. Mix well cover and keep overnight in a cool place to ferment.



Before making Adai Dosa, add Onions, Coconut and Coriander leaves/Dill/Mint. Heat a tava(griddle) and grease it generously. Now, pour one ladleful of batter on the tava(griddle) and roast both sides till it becomes golden in color.

Serve hot with Butter, Pickles or Tomato Ketchup.

Avalakki Dosa

INGREDIENTS :

2 Cups Raw Rice
1 tsp Methi (Fenugreek) Seeds
2 tsp Urad Dal (Black Gram split)
e Cup Avalakki/Poha (Beaten Rice)
1 Cup Coriander leaves, Chopped
e Cup Curry leaves, Chopped
3 - 4 Big Shimla Chilies, Chopped finely

METHOD :

Wash and soak the Rice, Methi and Urad Dal for 4 hours. Soak Avalakki in water for 5 minutes before grinding. Grind all the ingredients together to a smooth batter. Cover and keep overnight in a cool place to ferment.

Heat a shallow fry pan and grease it with little oil. Add one ladleful of the batter. Sprinkle the Coriander, Curry leaves and Chilies over it. A teaspoon of oil can also be added on the sides, cover and cook over low heat turnover and cook the other side for a minute.

Serve hot with Coconut Chutney.

Paneer Uthapam

INGREDIENTS :

3 Cups Raw Rice
500 ml Milk
1 Cup Beaten Rice (Avalakki/Poha)
6 - 7 Green Chilies, Chopped finely
1 tbsp Coriander leaves, Chopped
1 tsp Cumin Seeds
Salt to taste
Oil for roasting

METHOD :

To prepare Paneer :

Paneer UthapamBring the milk to boil. Add lemon juice and continue to boil till the milk curdles. Remove from heat and keep aside to cool.

Wash the Rice and add to the curdled milk. Mix well. Place a tight lid over the vessel and let the Rice soak in the milk mixture for 6 hours.

Add 1 tbsp Salt and the washed Beaten Rice to the milk mixture and mix well. Grind the mixture to a fine, thick batter. Cover and keep aside for 8 hours to ferment. Add little water to the batter and make thin Dosas on a greased tava(griddle).

Variation :

Keep the batter thick. Add Green Chilies, Coriander leaves and Cumin seeds. Mix well. Heat a tava(griddle) and grease it with Oil. Pour a ladleful of batter on the tava to make a thick Uthapam(thick pancake). Roast on both sides and serve hot with Coconut Chutney.[b]
