Ingredients:
Boiled Rice - 2 Cups
Grated caroot - 1 cup
Chopped Big onion - 1
Chopped tomota -1 (small)
Mint leaves - 10 nos.
Slit Green chillies - 4 nos.
Cashewnut - 10 ( even groundnuts can be substituted if cashews are not preferred )
Ginger. garlic paste - 1 tbs
Ghee - 1 tbs
Oil - 3 tbs
cloves - 2
cinnamon - 1
cardamon - 1
Garam masala powder - 1/2 tsp
Chill powder - 1 tsp
Coriander powder - 1 tsp
Turmeric powder - 1/4 tsp
Curry and coriander leaves (chopped) - small amount
Salt as per taste
Cooking Method:
Cut the tomato into small pieces. Chop the onions and slit the green chillies.
Place the saucepan on a medium heat and allow it to warm through.
Add the ghee,oil and Add cloves, cinnamon and cardamom. Add the cashews and let it be light brown
Add chopped onion, mint leaves and green chillies and allow onion turn to be brown.
Add ginger, garlic paste and fry for 1min. Add the tomato and mix well.
Then add grated carrot , fry continuosly. Add salt.
Add turmeric powder, garam masala, chilli powder, coriander powder one by one.
Mix contiously till oil comes out.
Mix well it to the boiled rice and add some ghee
Marinade the rice with curry and coriander leaves.
